Last December, in fact, I promised my husband I'd never try to make pralines again, simply because of the pall that a botched batch of them casts over the Chalmers household for days afterward. No, instead I'll make the hickory nut cookies; I also like one Chowhound's suggestion of washing the nuts in salt water and then roasting them. Somehow it sounds very Georgia, in the same spirit as dropping a few salted peanuts into a bottle of Coke before drinking it. Hickory nuts are small & roundish, but not as thick as pecans. It's likely a variety of short fat pecans rather than tall thin pecans. The best use is, of course, pralines!
